Recipe: Rice crusted quiche


What to do when you're craving for quiches but too lazy to make a proper crust?

Here's a cheat: Use rice to make the crust! (Recipe inspiration from Jane Hughes)

- cooked leftover rice (half a bowl)
- 1 tbsp olive oil

- 3 eggs

- a handful of grated cheese (any decent-tasting cheese will do)

- sliced/cubed tomatoes, onions, green peppers, potatoes, mushroom, crabmeat, sweet corn, chicken breast (just add whatever's to your liking)

- salt and pepper to taste
- Italian herbs


1. Preheat oven to 200 Degrees Celsius.

2. Crack 1 egg into the rice and olive oil. Mix and add salt & pepper.

3. Grease the quiche dish and spread rice over the bottom of the dish. Press down with spoon to make a firm base.

4. Sprinkle grated cheese over the base and bake for 10 minutes.

5. Arrange the ingredients on the base and add in the other 2 eggs with the extra cheese as quiche fillings. Pour them over rice base and bake for 30 minutes.

6. Sprinkle on the Italian herbs for garnishing and taste.
