Braised Abalone with Mushrooms and Broccoli Recipe


A classical dish for Chinese New Year reunion dinners - the tender abalone and umami flavour of the dish will definitely leave your family craving for seconds.

With a Skylight Abalone Chinese New Year set, I simply used the abalone and broth as the main ingredients.

(serves 5)

- 1 canned abalone (or 2, if your family really loves abalone)
- Dried mushrooms and shiitake mushrooms
- Chicken stock
- Broccoli
- Shanghai Green vegetables
- Salt
- Oyster sauce
- Dark and light soy sauce
- Rock sugar
- Corn starch


1. With the can intact, place the entire abalone can in a pot of hot water to boil for about 3 hours. This is to ensure that the abalone broth seeps into the abalone to enhance its flavour.

2. Then, slice the abalone thinly (or leave it as it is, if the abalones are small). Set aside 100ml of the abalone broth in the can.

3. Soak dried mushrooms in water for 15 minutes, and remove stems from the mushrooms. Slice thinly. Clean shiitake mushrooms and set the mushrooms aside.

4. Heat abalone broth with some chicken stock and water. Simmer for about 10 minutes, and add in 1 teaspoonful of oyster sauce, 0.5 teaspoonful of dark soy sauce (for colour), 0.5 teaspoonful of light soy sauce, and 4 small cubes of rock sugar.

5. Soak broccoli, mushrooms and vegetables into broth for 5 - 10 minutes.

6. In a separate bowl, mix in corn starch and water. Pour it into broth to thicken it.

7. Plate and serve.
