Easy Meat Lasagna & Mashed Potatoes Recipe


I miss tinkering around in the kitchen.

So on a fine self-declared e-learning day, I've decided to bake lasagna! Damn. It was awfully time-consuming preparing the cream sauce and tomato sauce. :( But for the sake of satisfying my poor deprived tummy, it'll be worth it!

My diet can be put on hold for just a single meal.

(Serves 4)

- A box of San Remo Instant Lasagna sheets
- 1 onion
- 1 potato
- 1 egg (shredded)
- 2 chicken franks, diced
- 300g minced pork/ beef
- 4 button mushrooms, sliced
- 3 cloves of garlic, minced
- 1 tomato, sliced
- 2 crabmeat sticks, sliced into thin strips
- 4 tblsp unsalted butter
- Chicken stock
- Tomato paste
- Plain flour
- Fresh milk
- Cheese! (Honestly any type of cheese will do, but mozzarella's the best.)
- Oil, salt, pepper and italian herbs for seasoning


Meat sauce

1. Heat oil in a saucepan. Stir in garlic and onion. Cook until soft. 

2. Add minced meat, stir in tomatoes and all other cooked ingredients, tomato paste (1 small bottle of Prego's sauce works just fine) and chicken stock. 

3. Season with salt and pepper. Cover and cook gently for 15 minutes. Add more water if desired. The sauce can't be too runny though. 

Cheese sauce

1. Melt butter in a separate saucepan on medium heat.

2. Stir in flour and water. Don't let the flour clump.

3. Remove from heat and stir in fresh milk. 

4. Return to heat, stir till smooth. 

5. Add in cheese and stir under low heat till it melts. Season with salt, pepper and some italian herbs.


1. Preheat oven to 180 Degrees Celsius. 

2. Lightly grease baking dish.

3. Pour half a cup of meat sauce into the dish.

4. Alternate layers of lasagna, cheese sauce and meat sauce. Allow for 4 lasagna layers.

5. Top the entire thing with cheese sauce and sprinkle more grated cheese on top. 

6. Bake in oven for 35-40 minutes. Ensure that the lasagna sheets are completely covered with sauce for retention of moisture or it'll end up hard and charred. 

7. Test if cooked by pricking with a fork.

8. Let stand for 5 minutes before serving. 

Mashed Potatoes

1. Peel potatoes and cut them into chunks. 

2. Fill a pot with water and sprinkle in some salt.

3. Place potatoes in and boil for 8 minutes.

4. Remove potatoes and mash.

5. Add in a tablespoonful of butter and some fresh milk. Add salt and pepper to taste.

6. In a saucepan, melt 1 tablespoonful of butter

7. Pour in some flour and stir thoroughly. Gradually add some milk, pepper, salt and chicken stock. Italian herbs are optional for the gravy. Bring to a boil while stirring continuously till gravy turns opaque and slightly brown.

8. Drizzle gravy over mashed potatoes.
