Salted Fish Fried Rice Recipe


It is the must-order dish during every single trip to the Tze Char stall. Either this, or Yang Zhou Fried Rice.

To curb my frequent cravings for Salted Fish Fried Rice, it's definitely useful to know how to whip up this dish at home.

(Serves 2)
- 2 bowls of leftover cooked white rice
- 2 tablespoonfuls of finely chopped threadfin fish
- 1 tablespoonful of minced garlic
- 2 tablespoonfuls of chopped spring onions
- 1/3 bowl of Minced pork
- 1/2 bowl of mixed vegetables (corn, carrots and peas)
- 1 egg, beaten
- Chinese Shaoxing wine
- Corn starch
- Salt and pepper

1. Marinade minced pork for 10 minutes with 1 teaspoonful of Shaoxing wine, 0.25 teaspoonful of salt and 0.25 teaspoonful of corn starch.
2. Heat wok and coat it with oil.
3. Pour in the garlic and salted fish. Fry till fragrant.
4. Add in the mixed vegetables and minced pork.
5. Pour in the rice and stir fry till the rice grains are nicely separated.
6. Add in salt and pepper to taste.
7. Drizzle egg over the rice and continue to stir fry. Ensure that the rice does not clump together.
8. Add in spring onions.
9. Garnish and serve.
