Sweet and Sour Pork Recipe


Sweet and Sour Pork is the classical dish you'll see at every single economical rice stall and Tze Char stall in Singapore. And I've managed to recreate it in my own kitchen! :)

(Serves 4)
- 1 pack of pork spare ribs (about 250g)
- Corn flour
- 1 egg
- Salt, sugar, and pepper
- Flour
- Ketchup and chilli sauce
- Vegetable oil
- Light soy sauce and vinegar
- 2 cloves of garlic, minced.
- Red bell pepper, cubed
- Coriander
- Onion, sliced

1. Thaw the pork spare ribs and cut it into cubes of desired size.
2. In a bowl, beat the egg, and mix in 3 tspful corn flour, 1/2 tsp salt, a dash of pepper, 2 tbsp water, 3 tbspful flour. Coat the pork with batter.
3. In a wok, pour in at least half a bowl of oil. Heat.
4. Fry pork till they are golden and crisp.
5. Remove to cool. If you think they are not crunchy enough, you can make more batter to coat and fry it a second time. (I thought once was sufficient, but it really depends on your own preference)
6. In a wok, saute garlic, onion, red bell peppers. Pour in 4 tbspful ketchup, 1 tbspful chilli sauce, 1 tspful light soy sauce, 2 tbspful water, 2 tspful sugar and 1 tspful vinegar to taste. You may vary the amounts till your desired level of "sweet-and-sour"-ness.
7. Pour in the pork and allow it to simmer for a minute or so.
8. Garnish with spring onions and coriander, and serve.
