Cheesy Meatballs with Caramelised Onions Recipe


Nothing smells as heavenly as a batch of cheesy meatballs fresh out from the oven. Think IKEA meatballs, except with the satisfaction that you've made it yourself, from scratch. That'll be an appetiser sure to impress your guests!

(Serves 5)

- 500g ground pork
- 2 slices mozzarella cheese
- 1 medium onion, sliced
- 1 tomato, diced
- 1 cup of bread crumbs
- 1 egg
- Salt and pepper
- Corn starch
- Italian herbs
- Ketchup
- Olive oil
- Brown sugar


1. Heat a non-stick pan on low heat and coat pan with olive oil. When oil is heated, add in the sliced onions and stir for 10 minutes, remembering to deglaze and scrape up the chunks of onions stuck to the bottom of the pan (the frond) by adding water a little at a time.

2. Add some salt and 0.25 teaspoonful of brown sugar. Continue to allow the onions to cook at low heat, checking on it every once in 5 minutes.

3. Leave it to cook for another 1 hour, or until onions turn dark gold or light brown.

4. Scoop up 3/4 of the caramelised onions to place in a large mixing bowl.

5. Pour in the diced tomatoes into the pan and allow it to cook with the remaining onions. Add 2 tablespoonfuls of ketchup, some salt, pepper and sugar to taste.

6. When sauce is done, leave it to one side.

7. If you don't have ready-made bread crumbs at home, tear up a slice of bread and toast it. Then, place the shreds into a blender to blend it into crispy crumbs.

8. Set aside 1 tablespoonful of crumbs and add the rest into the mixing bowl.

9. In the mixing bowl, add in the minced meat, egg, 0.5 teaspoonful corn starch, salt, pepper and a dash of italian herbs.

10. Shape the meatballs and place them in a baking pan lined with aluminium foil. Bake at 180 degrees C for around 15 to 20 minutes, or until golden brown and firm.

11. In a plate, drizzle the sauce and bread crumbs over meatballs, garnish and serve.
