Seafood and Chicken Baked Rice Recipe


Ingredients (serves 5):

- 2 cups white rice
- 3 cloves garlic, chopped finely
- Chicken stock
- Sliced mushrooms
- Shrimps
- 1 cup mixed vegetables (peas, corn and carrots)
- 1 cup bread crumbs
- 3 tablespoonfuls butter
- Salt and pepper, to taste
- 3 crabmeat sticks, chopped
- 250g chicken fillet
- Corn starch
- Italian herbs
- 1 cup mozzarella cheese
- 200ml carbonara sauce
- 1 tablespoonful light soy sauce


1. Cook rice and leave it to cool.
2. Thaw chicken fillet, slice it, and marinate it with corn starch, salt, pepper and light soy sauce. 
3. In a wok, add butter, and stir-fry garlic on low heat. Add mushrooms, shrimps, mixed vegetables, crabmeat, chicken fillet and chicken stock. 
4. In a large casserole, put in rice and loosen it with a fork. Pour in the rest of the ingredients from the wok, and add italian herbs, cheese and carbonara sauce. 
5. Mix the rice and ingredients gently. 
6. Bake in a preheated oven at 180 degrees celcius for 15 minutes. 
7. Sprinkle crispy bread crumbs over the baked rice for a perfect blend of crunchiness and cheesy softness.
8. Garnish and serve.
